Some meals are just so delightful that they don’t deserve to be placed in the archives to be blogged about another day. Nay, they require immediately blogging praise, while the memory is still fresh in mind, and on the palate. This simple yet delicious balsamic steak that we cooked last night is one such meal. Courtesy of the latest edition of the Healthy Food Guide magazine.
From the melt-in-your-mouth tender fillet steak (from our new butcher *love*), that was marinated in a mixture of balsamic vinegar, garlic and whole grain mustard. To the creamy potato mash, jazzed up with crème fraiche and seeded mustard.
But the real star of the dish was the rather wonderful ‘relish’, made simply by baking halved mini roma tomatoes, then combining them with a mixture of balsamic vinegar, parsley and flaked almonds (I was out of pine nuts).
Beautiful flavours. Beautiful meal. And one I will be making again – that’s for sure! What about you? Ever made your own ‘relish’?
This looks delicious!
The relish looks great, but my mouth is watering at the thought of the steak…iron deficient maybe? 😉
Thanks for sharing!
Funny you should say that! I've been crazing steak this week too – so thinking that perhaps my iron levels are a little low!
What a lovely easy relish to make! And perfect for that steak too! 😀
Yummm! This look so delicious – oh how I wish I could eat all of those tomatoes. One day, one day! 😛
I've made tomato relish before – but it defnitely wasn't that easy or that good looking!
This is my kind of meal for sure Lisa! What lovely sweetness from those tomatoes for sure 🙂
