Today was my first day back in the office after the Christmas Break and it was painful. But probably not for the reason you think. Rather, it seems I have a severe case of DOMS (or Delayed Onset of Muscle Soreness) from yesterday’s weight session! Seriously….I am feeling sore in muscles that I didn’t even know existed!! So, while I skipped my planned run this evening, I did come home and make a protein packed dinnerl. With chicken and mozzarella in the fridge, and tomatoes in the pantry, parmigiana seemed the obvious choice! But as I am not a huge fan of crumbed chicken (or any sort of crumbed food really), I opted to make my favourite oven baked chicken parma instead. First, while I had two chicken breasts browning in a frypan, I made a tomato sauce combining tinned tomatoes, fresh tomato, oregano, garlic and thyme.
Then it was all layered together in a casserole dish.
Chicken and tomato sauce.
Plus a sprinkle of olives and chorizo for an extra flavour kick. Covered with foil and placed in the oven for 30 minutes or so, until the chicken had cooked through. Finished with a slice of mozzarella…
Ad grilled until melted.
Mmmm cheesy. Served with a side of broccoli and beans.
I just love the flavour combination of tomatoes, olives and mozzarella. And the chicken was wonderfully moist and tender having been oven baked while covered with foil.
A tasty and healthy take on a pub favourite. And , to be honest, I’d easily pick this version over the crumbed variety any day. Although I think I still need to convince Mr BBB 😉 Anyway, its time to watch some Tudors with my fur gals….
Who, as you can see, are being rather clingy this evening!! What about you? Do you like crumbed foods? Happy Baking 🙂
That parmigana looks great Lisa 🙂 Plus I recognize all those Aussie cans/labels (heart)
Awww what a sweet pic of you and the kitties!
Tomato sauce and olives is definitely something I am going to have to try! It looks delicious!
I loooooove olives and cheese, so would definitely rather order your Parm than the standard pub version!
That chicken parm looks great! Did you bread you chicken?
I love this dinner – looks delish! The greens are so colorful!
I love olives so I can't believe I never thought to add them to a dish like that. When I was a meat eater I liked things crumbed, but now that I don't eat meat I prefer my veggies, and tofu, naked.
Not a fan of the crumbs either really. This looks yummy!
I usually make chicken parm without crumbs too, but like you, the "mister" would rather use them.
I love the pic of you and your fur girls! So cute!
Not a fan of crumbs, this is how Rish makes it for himself at home now. I have that but no cheese.
I like crumbs, but they are very messy and time consuming, so I would happily go without. This looks delicious!
I only WISH I wasn't a fan of crumbed chicken- one of my biggest food weaknesses 🙂
Oh yum, I love all the ingredients in this (especially the olives)!
Sorry I've been MIA, but I'm glad I returned to this recipe. I love cheese!
Not really a big fan of crumbed foods, love the look of your parma though, really looks goooooood 🙂
Yum, that Parma looks great! I do have a penchant for crumbed foods but I am trying to stay away from them and swap to more "naturally" prepared foods!
This looks insanely good!!!!
Ouch, sorry to hear about your muscle soreness and I bet it must hurt because you're definitely not one to complain! That looks great-I do love crumbed food although I know it's not supposed to be terribly good for you. Ah well! Once in a while is ok 😛
The reason I like a parmi is because it's like eating chicken pizza! No crumbs for me though. Yumm…
