In true Bake Bike Blog style – today involved a little of each. I spent the morning catching up on some domestic duties, then Mr BBB and I met with some of his friends to make the most of the sunny day. Given my mountain bike is still suffering from the effects of last week’s race, we decided to head out on our road bikes instead. We followed a 30km loop (from Stromlo to the city then back to Stromlo) using a mixture of roads and cycle paths.
It was absolutely perfect weather for an afternoon ride.
I found it hard to believe that this was 3/5ths of the distance of my race last week, but completed in a much quicker time. I guess the choice of bike, the weather and the roads all had something to do with that 😉 I was asked to bring a sweet treat to tonight’s pre-game dinner, and when I saw a recipe for raspberry oatmeal squares over at Nibble Nourish Run, I just knew that I had to make some.
I changed the flour for GF flour, and used apricot jam in place of raspberry jam. I also used walnuts instead of pecans.
I don’t know whether it was my modifications, or whether I needed to cook the squares longer, but they turned out rather soft.
Solution??? I served it as ‘apricot crumble’ instead! With vanilla ice-cream of course 🙂 Tonight we rugged up and headed to the local football stadium to watch the Wallabies take on Fiji in the Rugby Union.
We were lucky to have awesome seats, and be close to the action!
Australia performed brilliantly and won 49 to 3!
Go Wallabies!!! We stayed up after the game to watch another Aussie, Sam Stozer, compete in the French Open Final. Unfortunately she didn’t win – but we were cheering for her all the way! good solution for a soft crumble!!
i use gluten-free flour in baking all the time and i must say that each time i substitute wheat flour for gf flour.. i can never know how it will turn out. i know it will be delicious.. but yea the texture is so hard to determine!
