Hectic. I think this is going to be my mantra for the next 8 weeks, as the reality of picking up the extra workload is starting to sink in. But, luckily, I am fairly good with time management, particularly when it comes to food!
(and vino!) Take this Asian Beef and noodle salad, for instance. Looks fancy, filled with lots of yummy ingredients, but took only 20 minutes or so to put together. Courtesy of Jamie Oliver’s 15 minute meals cookbook, of course!
And yes, this is no optical illusion. This salad was HUGE!!! Filled to the brim with soba noodles, spiced steak, lettuce, carrot, coriander, cashews and chilli.
Brought even more to life with a squeeze of fresh lime juice, toasted sesame seeds and a dipping sauce comprised of soy sauce, chilli and pickled ginger (genius!!!).
Served communal style, and enjoyed as we chatted the evening away.

I've been there … seen hectic and then some. Very glad to say that right at the moment life is just life, neither hectic nor slow, just life … which is exactly what I need right now. Hope your next eight weeks aren't too bad, good quick meals like this are certainly a good way to help you get through.
It does look erally fancy, and yum!!!
