This week has been all about simple meals. Simple to shop for. Simple to prepare. For we are a little short on time, and with guests arriving on Friday for a big weekend of parties and fun, our ‘to do’ list is growing rapidly. One such simple meal was this tasty salad. I roasted a quarter pumpkin, then threw in some mushrooms and smoked chicken for the last 10 minutes.
Piled high on a bed of spinach and cucumber, then topped with avocado slices and a dressing made with olive oil, white wine vinegar, seeded and dijon mustards.
Simple to prepare, yet packed with flavour.
Served with a glass of vino, and our tummies were well and truly happy.
But now, onto that ‘to do’ list….
I like simple dinners like this-often necessary if you're in a hurry. That dressing looks really nice and creamy! 🙂
