With only 3 sleeps until our overseas adventure, tonight’s dinner was very much a mish mash of the ingredients we had left in the fridge. A delicious mish mash nonetheless. And made all the more delicious by a sweet sherry sundried tomato sauce.
How’s that for a little dinner alliteration 😉 I found inspiration for the sauce from a recent edition of Good Taste (although sadly it seems that I threw it out before making note of the recipe). I do recall that it consisted of onions, garlic, sundried tomatoes and a good splash of sweet sherry. Simmered until thick, then spooned atop a grilled chicken breasts.
Add a bed of quinoa (cooked in chicken stock)….
And a pile of brussels, broccoli and asparagus,
And we had ourselves quite the tasty dinner.
But the sauce……oh the sauce. Sweet, sticky and “lick your lips” worthy. Note to self – must find the recipe asap so I can share it with you! What about you? What is your favourite sauce to serve with chicken?
Trader Joe's has this Sweet Chili Sauce that we put on everything. It's so good!
OHMYGOD THREE SLEEPS TAKE ME WITH YOU.
*ahem*
But seriously. I cry.
Have an amazing, amazing time!!
Yay for your vacation! I wish you were coming to Cleveland! 🙁

This recipe looks delish!
My overseas trip is postponed- AGAIN! I hope you have such a lovely time and PLEASE make sure you let us in on all your adventures so we can at least pretend we're on holiday too.
Wawho for holidays. So jealous. Although, I can't wait to see your posts… Post travel. 🙂 Great looking feed lovely. I'm so hungry right now, I could totally gobble that right up. SOOO good.
What a clever improvisation! I can see this working quite nicely indeed! 🙂
Looks awesome. I'd be happy with the sundried tomatoes & quinoa. The man would be very happy with the addition of a chicken breast!
You're going to have the most wonderful time.
That looks seriously awesome Lisa – and looks pretty easy to make too! Sometimes leftovers make the best meals!
